北海道札幌長龍店「一幻拉麵」於2009年由總店長林直樹先生 (Mr Naoki Hayashi) 創立，憑著香稠濃郁的甜蝦湯底俘虜全日本國民及各國旅客的心，開業短短幾年已成為札幌名物。2018年正式登陸香港。
一幻拉麵有別於其他日本拉麵的最大亮點，正正是其別具一格的甜蝦湯底，一幻拉麵的湯底是每日以大量甜蝦蝦頭新鮮熬製，帶來濃濃的鮮味。
大家一向在香港食慣的可能都是以豚骨湯底為主，又或者是醬油湯底甚至是雞湯湯底，但是以蝦湯掛帥的，卻可能少之又少。而一幻拉麵有別於其他日本拉麵的最大亮點，正正是其別具一格的甜蝦湯底，一幻拉麵的湯底是每日以大量甜蝦蝦頭新鮮熬製，帶來濃濃的鮮味。而一幻有三種湯底，包括原味(純蝦湯)、適量豚骨豚骨蝦湯及濃厚豚骨蝦湯。
